What are Mayak Eggs?
“Mayak Gyeran” (마약계란), which is the Korean name of this dish, translates to “drug eggs” to signify the incredibly delicious and addictive taste of these eggs, as its alluring flavor is guaranteed to have you craving for more.
Soy marinated eggs have always been my weakness. This recipe in particular is hands down one of my favorite banchan (Korean side dish) to make as it is suitable for any time of the day.
The beauty of these Korean marinated eggs lie in their versatility, as it can be used as an excellent garnish to heighten the flavors of any dish that you prefer. They also make for an incredible substitute for ramen eggs which contain similar flavor notes.
Korean Marinated Mayak “drug” Eggs
Ingredients
- 6 large eggs
- 1 tbsp each salt and white vinegar for boiling the eggs
- 1 cup soy sauce
- 1 cup water
- 1 cup sugar or any kind of sweetener like syrup
- 1 small green onion I prefer using less green onion
- 4 gloves garlic minced
- 4 small thai chillies use any kind of chillies to your taste
- 1 tbsp toasted sesame seeds
Instructions
- 1. Add into your water, to boil your eggs, a splash of vinegar (can be any kind of vinegar). This will make the peeling easier.
- 2. After 6 minutes put the eggs into ice water to let them cool down.
- 3. Combine the soy sauce, sugar, water, garlic, chillies, sesame seeds and green onions into the container you want to marinate them and shake/stir well until the sugar is dissolved.
- 4. Peel the eggs carefully and put them into the container.
- 5. For even coverage put a piece of paper on top of the eggs.
- 6. Leave it overnight.
