Chinese Sausage fried rice – A 20 minute recipe

Chinese Sausage Fried Rice or lop cheung chow fan is a quick and easy fried rice recipe that’s perfect for a weeknight meal. I like to make this when I am watching a series on Netflix, its quick, easy and you always have enough of it.Adding Chinese sausage & it’s game over. ITS SO GOOD.I love how balanced this rice is it’s sweet and savory!

What is Chinese Sausage?

Chinese sausage is pronounced lop cheung or lop cheong in Cantonese. Lop means “preserved” and cheung means “sausage.” Written as 腊肠, it is pronounced là cháng in Mandarin. That said, most Mandarin speaking people refer to Chinese preserved sausages as 香肠 or xiāng cháng or “fragrant sausage”. These thin, reddish, dried sausages look kind of like long, miniature salamis. Look for them hanging from cotton twine in the Chinese grocery or vacuum-packed in the refrigerated section. The southern variety of Chinese sausage have other variations in spelling like “Lap Cheong” or “Lap Chong” (腊肠).  are other variations in spelling like lop cheung or lop cheong.

Ingredients
  

  • 500 gr Cooked Jasmin Rice
  • 2-3 Chinese sausages
  • 2 whole large eggs
  • 1 Onion, chopped
  • 4 gloves garlic, minced.
  • 2 green onions
  • 1 carrot, diced.

Seasoning

  • 1,5 Tbsp Soy Sauce
  • 1,5 Tbsp Dark Soy sauce Adjust accordingly to taste. (I just eyeball it most of the time)

Instructions
 

Preperation

  • Preparation is key for fried rice, you want everything in reach when you start cooking because it’s going fast.
  • – Cut your vegetables and set aside.
  • – Cut the Chinese sausages in small bite size pieces on a bias and set aside.

Steps

  • 1. To a hot wok, brown your Chinese sausage and render off the fat and remove once crispy.
  • 2. To a hot wok, add your vegetables and cook for 1-2min.
  • 3. Add in your cooked rice and seasoning, give it a toss.
  • 4. Push the rice to the side, add the eggs and par cook before mixing in.
  • 5. Add the Chinese sausage and give it all a final toss.
  • 6. You’re done and enjoy watching your favorite tv show with fried rice.
