This egg omelette recipe is nothing new. But its for my lazy/hungover mornings that I want to eat something nice. Its so easy and quick that I would recommend everybody to have ricepaper standard in your kabinet. Just so you can make this recipe.
Vietnamese streetfood
Bánh tráng nướng (the OG name of this dish) is a Vietnamese snack that appeared about 20 years ago. Bánh tráng is the name of rice paper and nướng means grilled, so we could translate it to grilled rice paper.
It is very popular in Đà Lạt, a city in the center of Vietnam, where it is usually sold in the evening in the street. Rice paper is put on a grill, then they add green onions, saté, crack an egg, and top it with sliced sausage. The whole thing is then drizzled with sweet chili sauce and mayo before being folded.
Super easy Breakfast: Egg Omelette in ricepaper
Ingredients
- 1 tbsp vegetable oil
- 2 eggs
- 2 sheets ricepaper
- 1 spring onion
- Sriracha, Mayonaise or chili oil Add any sauce you feel like in the morning.
Instructions
- In a saute pan add a bit of vegetable oil on low heat
- Add one piece of ricepaper to the saute pan and quickly after crack one whole egg on top of it. note: If you wait too long your rice paper will turn into a cracker
- Scramble the egge until you get a marble like texture.
- Add the spring onions and sauces on top of the egg and fold the whole things in half. Bake for a few seconds
- And you are done! I usualy make 2 with each a different sauces/topping
